Hobak-Pyeonsu (Zucchini Dumpling)

Today’s menu is Hobak-Pyeonsu. "Pyeonsu" means summer dumpling. Use a lot of vegetables like zucchini, mushroom, etc. It tastes clean and light. There are many ways of making Hobak-Pyeonsu, but I will be using my mother's recipe.

Ingredients for Filling

2 Zucchinis

5 Shiitake Mushrooms

1/2Tbsp Salt

200g Minced Beef

1/2Tbsp Chopped Garlic

1/2Tbsp Soy Sauce

Pepper

1 Green Onion

2 Hot Peppers

1/2Tbsp Chopped Garlic

1/2Tbsp Red Pepper Powder

Salt & Pepper to taste

Sesame Oil

Sesame Seeds


Ingredients for Wrapper

300g Bread Flour or All-Purpose Flour

Salt Water (1/2tsp Salt, 150ml Water)

1/2Tbsp Sesame Oil or Vegetable Oil


Dipping Sauce

3Tbsp Soy Sauce

2Tbsp Vinegar

2~3Tbsp Water

Sesame Oil

Red Pepper Powder


Recipe

1) Julienne zucchini and mushrooms, add salt and leave for 10 minutes. Season beef with soy sauce, pepper and chopped garlic.

2) Drain zucchini and mushrooms.

3) In a bowl, mix beef, zucchini, mushrooms and the rest of the filling ingredients (chopped garlic, spring onion, hot pepper, red pepper powder, salt, sesame oil and sesame seeds).

4) In a large bowl, mix flour, sesame oil and salt water and knead until smooth. Rest for 30 minutes.

5) Split the dough in half, roll the dough into a thick rope, slice into chunks. Roll the chunks into round wrappers. You can roll individual wrappers like in the video, or you can roll the entire dough and cut rounds using a cutter. The latter would be easier if you have a flat pasta roller.

6) Make dumpling by wrapping around filling in any shape you like.

7) Steam for 10 minutes. Serve with soy sauce dip. Enjoy!
