Gingerbread Man Macarons for Christmas

Today’s menu is Gingerbread Man Macarons for Christmas. I used ganache with orange zest and orange jam. But it was too sweet for me. Just FYI. The filling is just optional. You can use buttercream instead of ganache. Merry Christmas!

Ingredients for Macarons (7~8ea)

110g Ground Almond

100g Powdered Sugar

8g Cocoa Powder

85g Egg Whites

80g Sugar

Ingredients for Filling

Ganache (80g Dark Chocolate, 80g Heavy Cream, a Bit of Orange Zest (*optional)

Orange Jam or Mandarin Jam (*optional)

Ingredients for Icing

100g Powdered Sugar

2Tbsp Milk

Vanilla Extract (*optional)

Food Coloring (red)

Recipe for Macarons

1) Sift the ground almond, powdered sugar and cocoa powder together two times.

2) In a bowl, beat the egg white. Add sugar and beat until stiff peaks form.

3) Gently fold the (1) almond mixture into the meringue until the ingredients are just combined. Macaronage the batter until a consistent ribbon forms when you lift the spatula.

4) Place the mixture in a piping bag and pipe into gingerbread man shapes.

5) Let stand at room temperature for 1 hour and bake for 12 to 15 minutes at 150℃. Temperature and baking time may vary due to the type of oven.

Recipe for Ganache

1) Mix the dark chocolate and hot heavy cream and cool.

2) Add orange zest and mix well.


Decorate the gingerbread men using sugar icing and sandwich with the fillings.
