Budaejigae Recipe Tutorial

[DISCLAIMER] I am in no shape, form, or kind a chef or have any experience in cooking professionally. The recipe below is my own take on the popular Korean comfort food- 부대찌개 Korean Army Base Stew.

∞ 부대찌개 RECIPE! ∞ 


WARNING: I first thought this would be a simple dish to make because all there is to do is dice the ingredients and boil them in a pot... It did not end up being that simple.... ^^


INGREDIENTS (Serves 4 to 6 portions):

Stock- 

8 large Anchovies 

2 large shiitake mushrooms

Palm-sized leaf of Dried Kelp (다시마)

8 cups of water 

200-250 grams (1/2 pound) pork belly (pork shoulder or pork neck)

Salt


Sauce-

6-10 garlic cloves depending on size

1-2 tablespoons of hot pepper paste (고추장)

2 tablespoons of hot pepper flakes (고춧가루)

1-2 teaspoons of soy sauce

1-2 tablespoons of oyster sauce

1-2 tablespoons of cooking alcohol (Japanese Mirin or Korean Soju both work well)

1 teaspoon sugar 

1 teaspoon fermented soybean paste (된장)

1/4 cup water 

Salt 

Pepper


Stew-

Handful of kimchi (1 cup)

1/3 can of spam, sliced 

Half an onion (optional), sliced

Handful of spinach (optional)

150 grams (5 oz) sausage (any kind, ground beef would work), cut into bit sized pieces

150 grams (5 oz) of firm tofu, sliced

2 tablespoons baked beans 

Handful of rice cakes (if frozen, soak in warm water for 20 minutes)

150-200 grams (5-7 oz) of 당면, sweet potato starch noodles

Handful of enoki mushrooms

Half pack of instant ramen noodles

Slice of American processed cheese

4 cups of stock and save what is left over 


DIRECTIONS:

Stock- 

1. Place everything in a pot (gut the anchovies and optionally use a cheese cloth pouch) and boil for 25 minutes on medium-high heat

2. Cut pork into bite sized pieces and add after 25 minutes

3. Boil for 10 more minutes 

4. Throw away anchovy pouch and kelp 

5. Leave stock to cool and set aside the mushrooms and pork

6. Save Kelp for later use as a side dish (optional)


Sauce-

1. Finely chop garlic

2. Mix all the ingredients in a bowl 


Stew- 

1. Arrange ingredients in a shallow pot/frying pan (refer to the video for order of ingredients but feel free to improvise) 

2. Boil on medium-high heat for 5-10 minutes 

3. If stock evaporates while cooking add more from what you had left over
