Hi everyone, Margarita here!


I’ve been keeping my cooking/baking passion a secret for way too long and now it’s time I share it with you all. I partnered with Viki and ITO EN to deliver this very excited project of ours, where I will be recreating and putting my own little twist on popular desserts that go well with tea (did I mention I’m a tea addict?!).


In this episode we will be making one of the most delicious (at the same time the most difficult) cookies known to man: MACARONS! As I am a huge fan of chocolate and how it pairs perfectly with tea, that is the flavour I decided to choose for both, the cookie and the filling! 


Let’s get baking!!

∞ RECIPE:


Ingredients:

100g of icing sugar

100g of almond flour

20g of cocoa powder

50g of sugar

2 egg whites

Teaspoon of salt


Directions:

  1. Combine dry ingredients (icing sugar, almond flour and cocoa powder) in a bowl and mix
  2. Sift the mixture through a fine sift to get rid of lumps 
  3. Beat egg whites in a bowl while slowly adding sugar (stop mixing after you reach stiff peaks)
  4. Combine the dry and wet ingredients
  5. Mix carefully and DO NOT over or under mix (strive for a ‘molten lava’ consistency)
  6. Transfer bater to a piping bag
  7. Pipe the shells onto a tray lined with parchment paper
  8. Let the cookies sit for 20-30 minutes or until they form a hard shell (people in more humid countries will have to wait longer, sorry guys) 
  9. Pop the tray into an oven preheated to 150’C (300’F) for 18-20 minutes
  10. Take out and let cool 
  11. Heat the cream on the stove until you see bubbles on the side (DO NOT let it boil)
  12. Pour hot cream over crushed dark chocolate and mix
  13. Let the filling cool
  14. Pipe out as much filling as you want and assemble your cookies!
