Hi everyone, Margarita here!


I am back with a new delicious treat for you that goes amazingly well with tea. This treat is very special to me because, even though I found the pancake recipe online, I modified it with raspberry puree and created my own cream recipe. Hope you don’t mind my little flight of creativity!


So in this episode we will be making another popular French treat… the CREPE CAKE! And this one combines all of my personally favourite things - chocolate, raspberries and cream cheese :D Feel free to modify this recipe however you want and add any flavours that suit your tastes!

∞ RECIPE:


Ingredients (Pancakes):

4 eggs

500ml of milk 

200g of plain flour 

Teaspoon of baking powder

50g of sugar 

Teaspoon of salt 

2 tablespoons of cooking oil 

50g of cocoa powder

Vanilla extract 

Pink/Red food colouring (optional)


(Cream)

280 g of cream cheese 

100 g of sour cream

10 g of whipping cream 

15 g gelatine 

75 g of sugar 


(Glaze)

400 g of raspberries 

50 g of sugar 

10 g of gelatine 


Directions:

1.    Start making the batter by combining eggs, sugar, salt and milk in a bowl.

2.    Mix flour with baking soda and sift it into the batter

3.    Add cooking oil and mix well

4.    Divide the batter evenly into two bowls

5.    Add cocoa powder to one bowl and food colouring with vanilla extract to the other bowl

6.    (Optional) Add the food colouring to the vanilla pancakes

7.    Let the batter sit for 10-15 mins to release trapped air

8.    For the cream, combine cream cheese, sour cream, whipping cream and sugar in a bowl

9.    Whip the mixture until it reaches a stiffer, creamy consistency

10.  Heat up the stove on medium heat and grease a frying pan with oil

11.  Let pancakes cook on each side for a few minutes

12.  Cover pancakes with a towel or a plate to prevent drying/cracking

13.  (Optional) Even out the edges of the pancakes with a plate and a knife

14.  Add gelatine to the cream to make it less runny

15.  To assemble the cake, alternate between different-coloured pancakes with a cream layer in between each pancake

16.  Wash raspberries and press them through a sift to release the juice

17.  Add sugar and place the mixture on the stove. Cook until it boils and let boil for 10-15 minutes

18.  Let cool and add gelatine

19.  Pour the glaze over the cake (Make sure to work fast, as gelatine stiffens quickly)

20.  Decorate however you want!
